Chef Saul Montiel

Montiel is a seasoned restaurant industry veteran with over 20 years of hands-on experience working in some of Manhattan’s most respected culinary venues. Saul honed his craft training at I Coppi and Amaranth, two well-regarded establishments known for their commitment to authentic technique and quality ingredients. It was during this formative period that he found his true mentor in Chef Jodi Williams at the renowned Mediterranean restaurant Tappo, where his talent and dedication were recognized early — he became sous chef at the remarkably young age of just 19 years old, a testament to his natural ability and work ethic in a highly competitive industry. Montiel then advanced his career by joining Giorgione as executive chef, taking on greater creative and operational responsibility in the kitchen. Following a notable stint as sous chef at SoHo’s celebrated Lure Fishbar, where he worked closely alongside Chef Josh Capon refining his approach to seafood and coastal cuisine, Montiel rejoined his mentor Williams once again, this time serving as sous chef of Gusto Ristorante Bar Americano, further deepening the professional relationship that had shaped so much of his early career.

Saul officially joined the HK Hall team in 2018, taking on the role of banquet and restaurant Chef, where he has since become an integral part of the culinary operation. Saul’s thoughtfully crafted banquet menus draw on a rich blend of influences, encompassing traditional Mediterranean techniques, inventive nouveau Mexican flavors, and classic new American fare, resulting in a versatile and dynamic culinary offering for every type of event. Whether catering an intimate cocktail reception for a handful of guests or orchestrating a large-scale dinner for as many as 700 attendees, Saul’s delicate touch and meticulous attention to detail always shine through in every dish he creates. Chef Saul’s innovative recipes and culinary expertise have earned him widespread media recognition, having been featured on Good Morning America, The Wendy Williams Show, Epicurious, Univision, Food & Wine, Forbes, NowThis News, People en Español, Telemundo, and the Food Channel. Adding to this impressive list of accolades, he is also set to be featured on an upcoming episode of Food Paradise on the Food Channel, further cementing his growing reputation as a standout talent in the culinary world.
